Roasted Red Peppers

  • 4 large red bell peppers (or use other colors for a rainbow effect)
  • 2 T. olive oil
  • kosher salt
  • seasoning blend, such as Italian or Greek (optional)
  • feta cheese (optional)

Cut peppers into 1/2-inch strips. Place on foil lined baking sheet. Sprinkle with olive oil, salt and seasonings. Place in 400 degree oven for 1 hour, stirring often, to create carmelization. Store peppers (and oil from baking sheet) in airtight jar, either alone or layered with feta cheese. Serve warm as a garnish to any meat, salad or vegetable dish, or eat right out of the jar!
