Edamame Hummus

  • 2 cups shelled edamame, cooked in salted water
  • 2 garlic cloves, smashed
  • 2 tablespoons red wine vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 cup extra virgin olive oil
  • 2-3 dashes Sriracha (Asian hot sauce)

Place all ingredients in a food processor. Pulse until well blended (may be slightly chunky, if desired). Transfer mixture to a serving bowl. Serve with crackers, pita bread or fresh veggies.
